Why did you decide to open a store in Gotenyama?

Gotenyama is an area where history and culture thrive, offering a diverse community within its tranquil streetscape. We felt it was the perfect place to share our concept of “Connecting Japan and Indonesia through Food,” and decided to open our doors with the aim of becoming a restaurant cherished by the local community for years to come.

What was the best thing about Gotenyama?

The best thing about opening in Gotenyama has been encountering a community that warmly welcomed us and created an environment where we could receive their support. It brings me great joy to see regular customers gradually increase within this tranquil neighborhood and to feel that we are growing alongside the community.

What was the most difficult part of starting your business?

The most challenging part of opening the shop was expressing the Indonesian traditional confectionery, surabi, in a way that would appeal to Japanese customers. Through repeated trial and error in recipe development and balancing texture and flavor, we finally arrived at a product where “Japanese sensibility” and “Indonesian character” harmonized. This was both a major challenge and a significant learning experience.

How did you overcome that difficult situation?

Overcoming that difficulty was possible because we repeatedly created prototypes and conducted tastings, continuously refining the product based on candid feedback from customers and acquaintances. Furthermore, incorporating the insights of colleagues and experts well-versed in both Japanese and Indonesian food cultures sparked new ideas and provided solutions, allowing us to achieve a satisfying final result.
